Profile: Roasted Pistachios, Snow Peas, Umami

Grade: Ceremonial

Harvest: First Harvest

Cultivar: Gokou Blend

Origin: Uji, Kyoto

Grind: Stone-Milled [Ultra-fine]

Whisking immediately releases a robust, layered aroma that defines the complex roasted profile of this matcha. It features a lightly vegetal, smooth profile with notes of roasted pistachio, snow peas, mellow umami, and the perfect hint of bitterness.

This matcha is a high-quality blend led by the Gokou cultivar. Grown primarily in Kyoto, Gokou is a rare variety that accounts for only 1–3% of the region's tea production and is often sold in small quantities at a premium. When featured in a blend, this matcha develops a more complex flavor profile, allowing the natural flavors to shine even in a latte.

It is best appreciated without sugar to fully experience its subtle notes, though its naturally robust flavor remains even when lightly sweetened. This tea is versatile enough to be enjoyed as koicha, usucha, or a latte.

Hisaku, is one of my favs from the collection. I found this blend to stay true to its tasting profile. It was indeed umami and overall a creamy matcha. I will definitely be purchasing again!

a great matcha with a unique taste!! the concept of a pistachio flavor profile is what made me purchase from this brand in the first place. so far, a heavy hitter in my matcha obsessed household.

I got this as a gift for a friend who is a big matcha lover and incredibly picky when it comes to her tea. Her favorite is Ippodo Tea’s Kanza. She absolutely loved the Hisaku Matcha and said it came surprisingly close to her favorite!
